
In the culinary world, mastering two fundamental base soups is essential for anyone aspiring to enter the industry: clear soup and thick soup. To equip Bali WISE Intake 66 students as they prepare for their upcoming practical training, Bali WISE organized a basic soup workshop in the ZWC kitchen, led by F&B Product teacher Miss Dee. This session was especially dynamic as Ms. Dee was joined by Chef Danang, an experienced professional with a strong background in hotels and cruise lines. Together, they attentively guided all 26 hospitality students through hands-on practice.
Crafting Delicious Chicken Soup and Cream of Mushroom Soup

After prepping tools and ingredients at their respective stations, the students were eager to begin. Miss Dee kicked off the session with a brief introduction to base soups. The menu for the day featured a classic chicken vegetable soup representing clear soup, and a rich cream of mushroom soup representing thick soup. Students quickly got to work prepping ingredients, from dicing onions and garlic to peeling carrots, slicing mushrooms, and preparing vegetables. Meanwhile, Miss Dee and Chef Danang split up to provide personalized instruction throughout the room.
Focusing first on the clear soup technique, students worked with the instructors to simmer chicken for a rich broth while others sautéed onions and garlic to build the aromatic base. They boiled macaroni and chopped side ingredients such as carrots, potatoes, and green beans. Once cooked, the chicken was shredded. The sautéed garlic and onions were combined with the chicken broth, followed by the remaining ingredients, and simmered to perfection.
Simultaneously, other students prepared a traditional roux using butter and flour to thicken the cream soup. The rest of the team sautéed onions, garlic, and mushrooms before blending them into a smooth mixture. This blended base was returned to the heat, combined with the thickening agent, and finished with milk to create a rich, velvety texture.
Outstanding Results from an Engaging Class

Once both soups were cooked to perfection, the students plated their dishes with thoughtful garnishes. Broad smiles across the room reflected the immense pride they felt in their culinary achievements.
