Among these core skills, proper cutting methods stand out as a fundamental stepping stone, enabling aspiring chefs to develop their craft, adapt, and excel in the kitchen. Recognizing its importance, Bali WISE collaborated with Culinary Instructor Miss Dee to host a hands-on Cutting Method Class for the 26 students of Intake 66 in the Hospitality Program. Driven by high enthusiasm and curiosity, the students eagerly dove into learning and practicing these essential skills.
Technique, Precision, and Safety in Food Preparation

Gathered in the ZeroWaste Center (ZWC) kitchen, the 26 students began their session with thorough preparation. They conducted an inventory check to ensure all necessary tools and equipment were complete at their respective group stations. Once ready, Miss Dee introduced the various types of knives and explained their specific uses. The students then learned the proper technique for sharpening knives to ensure safety and precision before slicing.
Following the introduction, Miss Dee demonstrated basic cutting methods tailored to different ingredients. Starting with peeling potatoes and carrots using a peeler, she showcased various knife techniques suited for specific dishes, such as straight cuts for French fries, dicing carrots for soup, chopping onions, and julienning cabbage for salads. She placed a strong emphasis on correct hand positioning and knife handling techniques, ensuring students achieved precise cuts while keeping their hands safe.
To wrap up the practical segment, the students observed and practiced butchery techniques on poultry and learned how to assess meat quality. They explored chicken anatomy, butchery procedures, and specific cuts required for various culinary applications.
