
Mastering the art of morning cuisine is an essential competency for any aspiring culinary professional in the Food and Beverage industry. Western breakfast classics, defined by precise egg preparations, crispy waffles, and fluffy pancakes, require specific skills and attention to detail. Recently, the F&B Product class at Bali WISE Intake 66 stepped into the ZeroWaste Center kitchen alongside Chef Fariz to explore the characteristics, techniques, and theory behind crafting an authentic Western breakfast menu.
Mastering Egg Artistry, Waffles, and Pancakes

The hands-on session began with a roll call for 26 dedicated Intake 66 hospitality students. Chef Fariz opened the lesson with an interactive discussion on standard breakfast egg preparations, followed by a deeper dive into the hydration theory for batters and baking mixes. After setting up their stations, students watched closely as Chef Fariz demonstrated proper batter formulation for waffles and pancakes. Working in teams, students mirrored his techniques, preparing their batters before placing them in the chiller to rest.
While the batter chilled, Chef Fariz demonstrated delicate egg cooking techniques, guiding the class through soft scrambled eggs, French omelettes, soft-boiled eggs, poached eggs, and classic Hollandaise sauce. The teams then put their knowledge to the test, recreating each dish at their respective stations. To round out the meal, students baked their rested batters into crisp waffles and golden pancakes, prepared fresh simple salads, and applied final garnishes. The intensive session concluded with plating presentations and station cleanup, highlighting the immense enthusiasm and focus of the students throughout the day.

By bridging theoretical concepts like batter hydration with practical execution, the project did more than just teach students how to prepare breakfast. It built essential professional discipline. From executing delicate poaching techniques to maintaining immaculate station hygiene and teamwork under time constraints, Intake 66 demonstrated a strong readiness for the hospitality industry. As these future culinary professionals continue their journey at Bali WISE, hands-on masterclasses like this serve as vital stepping stones toward building their confidence and refining their craft for world-class kitchens.
